Grapes from Stewart Vineyard in the Ribbon Ridge AVA were fermented in neutral French oak and stirred daily during fermentation to create texture and mouthfeel. Cool fermentation helped preserve the aromas. No malolactic fermentation to preserve the natural acidity of the wine.
